The milk collection round is one of the most argued-over links in the cold chain. Turkey's regulation on specific hygiene rules for food of animal origin defines both a limit here and three situations that suspend it.
The limit
Article 57 requires the food business operator, on acceptance of raw milk and colostrum at the production plant, to ensure that the milk is rapidly cooled to 6 °C or below. For colostrum, rapid cooling to the same temperature or freezing is required, with storage at that temperature until processing.
Three situations where it does not apply
- The milk is to be processed immediately after milking.
- The milk is accepted at the production plant within four hours and processed.
- A higher temperature is needed for technological reasons in the production of certain dairy or colostrum-based products, and the Ministry has permitted it.
The second item is a logistics condition. Four hours is the total elapsed time from milking to acceptance and processing at the plant, including the length of the round, waiting and unloading.
The four-hour window bears directly on time spent on the dock.
Cleaning the tank is not a per-trip question
The same chapter covers the equipment side. Containers and tanks used to carry raw milk and colostrum are properly cleaned and disinfected before reuse after each transport, or after each series of transports where the interval between loading and unloading is very short, and in all cases at least once a day.
The phrase in all cases fixes the rule. Even for a tank running back-to-back trips, one full clean a day is the floor.
The surface material is defined too. For receptacles, churns and tanks in contact with milk the regulation asks for smooth, washable and non-toxic material, with surfaces maintained, easy to clean and capable of being disinfected where necessary. All surfaces in contact with raw milk are cleaned after use.
