How a meal is managed before service matters as much as which shift prepared it. The eight-hour framing is not a holding limit; the site's approved food-safety procedure must govern each stage.
Hand over responsibility between shifts
The day team should leave the night team the batch identity, preparation time, applicable instructions and named owner in writing.
Record process times
Keep cooking completion, cooling start and end, storage, dispatch and service times in one batch record.
Tie measurements to procedure
Take required product temperatures with the approved device and measurement point. Record device ID, location and calibration information too.
Verify equipment in advance
Check that cooling and reheating equipment can perform the required task with a representative load. Report capacity or record gaps before service.
Leave service decisions to the authorized owner
If records are incomplete or conditions deviated, do not infer safety from elapsed time. Obtain the authorized assessment required by the site's procedure.
