For cheese and deli products, container choice depends on packaging, odour, liquid and the cleaning routine. First group the products, then verify protection and washing conditions on the route.
Check by product need
| Need | Check |
|---|---|
| Odour separation | Lid closure and separate compartment |
| Brine | Leakage and liquid containment |
| Open product | Inner surface and cleaning access |
| Temperature | Representative route measurement |
| Washing | Material instructions and drying |
Prevent odour transfer
Carry strong-smelling items in a separate container or closed compartment away from neutral products. Mark containers by use group; check for residual odour after cleaning, with the container empty and dry.
Link product groups and container use in the record.
Manage liquid and moisture
For brined goods, check lid and base for leaks and choose an arrangement that keeps liquid from contacting other products. If condensation appears in a closed container, review product and ambient conditions together instead of assuming one cause.
Separate by packaging condition
For sealed packs, the transport container mainly supports loading, stacking and route protection. With open or sliced product, contact surfaces, lid openings and odour separation need closer attention.
Clearly label containers assigned to strong-smelling, neutral and brined products. If labels do not survive washing, choose a durable identification method and link container ID to the cleaning record.
Keep the lid closed until display. Use a lidded container during transfer and open it at the placement point. Observe waiting on the actual trip and keep measurement records rather than relying on an assumed short duration.
Inspect lid and sealing
Check lid fit, latch and joints before use. If damage or leakage appears, remove the container from use and inspect it again after cleaning or repair.
Verify the wash method
Compare detergent, water conditions and drying steps with the container maker's care instructions. Check for fat, salt and odour residue; remove a damaged container from use for assessment.
