The box is pre-cooled first and the product is loaded last. GEBHARDT recommends 12-20 hours of pre-cooling, at 0-2 °C for fresh goods and -21 to -25 °C for deep-frozen goods. Cold product put into a warm box gives its cold to the body and warms during the first hours of the route.
On the dispatch record, write down separately when pre-cooling of the box began, when the eutectic plates were fully frozen and when the product was loaded. If the first leg of the route shows a deviation, compare those three times first, then repeat the same route with equal starting conditions.
