In airline catering, waits and transfers between preparation and aircraft acceptance make risks visible. Link the lot and timeline for each flight in one record.
Load and handover timeline
Record flight number, product or lot, trolley ID, loading time, vehicle departure, apron arrival, aircraft acceptance, delivery location and recipient. Calculate actual dwell from timestamps; keep planned and actual times distinct.
Follow the customer instruction for product conditions and measurement method. If measuring, log device, calibration record and position; add door openings, delays and waiting location to the incident record.
If delayed or records show a discrepancy, segregate the load and preserve evidence. Confirm decisions about dispatch, service or other action with the authorised food-safety lead and customer. Track dirty returned trolleys separately from clean equipment.
