Mass catering may serve at one time, but food groups and preparation steps differ. Make the menu, route and waiting arrangement visible for each batch.

Build a timeline from production to service

Record batch or food group, production completion, packing, vehicle loading, arrival at each venue and service start. Add holding location, container openings and reason for delays.

Transport hot and chilled items in their own packaging under the approved service plan. Set measurement points and devices in advance; take readings at those points during loading, handoff and before service.

Escalate excursions to the responsible person

Compare the reading with the product or operation's acceptance limit. If outside limits, segregate the batch, notify the responsible chef and decide on use under the current food-safety plan.

After the event, review delayed venues, waiting time and group-specific readings together. Update the next service plan from your own records.
