Vehicle count or average weekly orders alone do not show capacity for a large customer. Use operating records to map when orders cluster, delivery windows and simultaneous chilled-space needs.

For a peak day, place order preparation, chilled staging, loading, staffing shifts and route cycles on one timeline. In a trial delivery, record volume completed, delays, space use and delivery performance; compare assumed capacity with actual results.

Share bottlenecks and measurement uncertainty with the customer. Agree committed volume, phased start, delivery windows and a contingency plan using trial evidence, then state them clearly in the contract. Investment or capacity guarantees require validated operating data.
