First make product flow visible in a small cold store: keep newly received goods in one zone and items selected for shelf replenishment in another. If space is tight, mark racks or floor areas.

Show lot and date on cartons and product location on the rack. During a shift, note search time and tasks that leave the door open; adjust the layout from actual movement records.

Place product groups according to their labels and quality procedures. Monitor temperature at points suited to product requirements and equipment instructions. For quick-frozen foods, check Codex CXC 8 retail storage provisions alongside local requirements.
