A second sensor channel is useful only when humidity results will affect a decision defined in advance.
Is the product exposed or packaged, and is the question product loss, surface drying or condensation? If manufacturer conditions or the site's quality plan do not support the measurement, do not add a channel simply to collect more data.
Specify in the test plan where the sensor should represent air humidity and assess it separately from the temperature sensor. One reading beside the load may not describe the condition of the whole container or product.
Review temperature and relative humidity on the same timeline with door events and product inspection notes. If condensation appears, record its location, surface and conditions with a photo; consult validated instructions for product decisions.
