An out-of-limit temperature starts two separate reviews: the quality team decides what happens to the product, while the Ministry of Agriculture and Forestry inspection checks whether hygiene rules were met. One does not automatically determine the other.
An inspector's three questions test the business response before they judge the cold chain temperature chart.
| Situation | Basis | Base amount |
|---|---|---|
| Broken cold chain, breach of hygiene rules | Law Art. 41/1-a, Regulation Art. 18 | retail TL 2,000, other premises TL 5,000 |
| Not recalling a product judged unsafe | Law Art. 22/2, 40/1-f | TL 5,000 |
| Spoiled product found on sale | Law Art. 41/1-d | TL 1,000, product seized |
The table shows the base figures in the Law's text; under Article 17(7) of the Misdemeanours Law, administrative fines are raised by the revaluation rate at the start of every calendar year. For the business the main cost is often not the fine: destroyed product, a stopped shipment and deductions under the customer contract weigh more.
On the product side, segregate the lot, keep the logger raw data, time zone, device position and shipment times, and note whether the reading shows air or product. The quality lead records the release, rework or destruction decision with reasons.
