At the shift boundary, risk comes from more than equipment or route behaviour. If load location, the time and sensor of the last reading, ownership of an open issue and the due time of the next action are not recorded, the incoming shift inherits an incomplete picture. The handover record preserves continuity rather than assigning blame.

Moving unfinished work between shifts in a written handover follows the cold chain basics.

Outgoing-shift responsibility

The outgoing shift does more than leave a last-known status. It matches the load to its physical position, links the last temperature record, leaves an unmeasured field as 'unknown' and writes the unfinished task with its next action. A pending alarm is not marked closed. Handover time, record owner and remaining risk stay visible.

Incoming-shift responsibility

The incoming shift does not only read the form. It matches the load, pallet, door status and, where relevant, logger display on the floor. If a value was not measured, it does not invent a retrospective number; it schedules the measurement and names the owner. For an open alarm, it checks data, physical condition and next action. An unaccepted or incomplete row is handed forward with a reservation.

FAO/WHO General Principles of Food Hygiene, §§5.1 and 19.12, supports clear roles and records suited to the operation. This handover form is an example for assigning unfinished work to the next owner.

A plate entering the freezer is not proof of readiness

The time an eutectic plate enters a freezer does not prove that it is ready. Preparation temperature, plate model, full solidification, airflow, shelf placement and the control process in the model instructions must be checked together. Record entry time separately from the basis for readiness acceptance; a time written on the freezer door does not complete the process.

Short sequence for an open task

  • check the load and physical position
  • link the last reading value, time, sensor and data file
  • leave an unmeasured value unknown
  • write the open alarm, issue and next action
  • sign the due time, owner and acceptance

This record does not turn monitoring into a product release decision. The existence of a temperature value does not mean the product is accepted; an open excursion or doubt is assessed separately under the quality procedure.

Hypothetical example: at the 14:00 shift change, pallet P-17 is in the loading area, its last reading is at 13:40 and a delivery document is still missing. Record these facts, the person obtaining the document and the next check time separately. 'Pallet ready' does not identify the remaining task.
