A plate delivers its cold near its own melting point. For fresh food the -3 °C plate is the right tool, for deep-freeze the -21 °C plate; conditioning temperature and container fit complete the choice.

For GEBHARDT plates the freezer runs at least 5 °C below the melting point, air stays free between plates, and a set leaves only when the filling is solid.
