Verify pastry condition at handover

Track raw, frozen and baked products separately by label, container and handover record.

Short answer

For each order line, record product state at dispatch, lot, label instructions, packaging and assigned container ID. Check seals, damage, leakage and any required measurement record at loading and receipt. Carry different product states only under an approved separation plan. If thawing, crushing or delay is suspected, segregate the lot and obtain written acceptance or action from the quality lead.

Separate pastry products by dispatch state and label instructions; appearance alone does not establish suitability.

Trace from order to container

For each order line, record product/lot, raw or baked dispatch state, label conditions, package type and assigned container ID. Link loading sequence and separation in the vehicle to the plan.

At receipt, record package integrity, leakage, crushing and observed product condition. If measurement is required, take its method and point from product/site instructions; link the result to lot and instrument ID.

For damage, delay or uncertainty about product state, segregate the affected lot and retain handover and photo records. Leave acceptance, rework or disposal to the authorised quality lead and record the decision in writing.
