Prioritize a first catering investment by the step that actually constrains the work, not by the most visible item. Observe kitchen capacity, portioning, container pool, washing and route load in the same service flow.

Keep a bottleneck log. For each service, record planned and completed portions, preparation delays, container count, waiting deliveries, extra trips and declined work. Note where the constraint begins and which equipment it relates to.

First assess schedule, route or container-return changes that require no new equipment. For purchases, show quoted cost alongside required space, cleaning work, usage frequency and verified additional portion capacity.

Run a small trial to see whether the new arrangement actually removes the constraint. Prioritize equipment only when logs show fewer delays or declined orders and the next step in the workflow can handle the added volume.
