Freezing time is set by pack thickness, how far below the freezing point the freezer runs, and the air gap between packs. The gel figures in the table are Polar Tech data.

PackFreezing pointFreezerTime
Standard gel-1 °CAt least -6, recommended -12 °C24-48 hours
Low-temperature gel-10 °CAt least -15, recommended -20 °C24-48 hours
GEBHARDT eutectic plate, 34 mm-3 to -21 °C5 °C below the melting point24 hours (8-24)

Polar Tech gives its time for all sizes at the minimum freezer temperature; in a colder freezer a thin pack freezes sooner. A pack can be hard outside while its middle is still soft, because the centre freezes last. The trial is run with the heaviest daily load. With entry time and pack type on the label, the morning team knows the ready batch.
