Whether a brief temperature peak appears in a chart depends on more than logging interval. Sensor response and mounting are also part of the measurement chain.

Record three variables separately. Find the T90 definition and test conditions in the device datasheet; note the logging interval in software settings. Document the sensor's position in air, on the product or in a representative load, along with its sheath and contact using a photo or diagram.

Test the installed setup

Under representative conditions, apply a step change with a reference sensor and compare both records. A logger may sample frequently while a slow sensor still reaches a peak late; a fast sensor in the wrong place may not represent the product.
