In-store semi-finished food can wait between preparation, processing and return to storage even when the transfer is short. Include this internal movement in the records.

Make waiting visible

Use a batch ID to record exit from cold storage, arrival at the work area and processing start. If the product returns to cold storage, record that time too.

Set batch size from the data

Compare the quantity moved out with the amount processed and written off. If large batches wait, trial a smaller workflow and compare using the same measures.

Protect the waiting batch

Keep product awaiting processing closed in a defined location. Follow product instructions for the carrier, cold source and cleaning method.

Separate product groups

Separate containers, trays and carts for raw and ready-to-eat food under the hygiene plan. If equipment is shared, define the cleaning step and record owner.

Compare batch exit, bench arrival, processing and display times with the waste log. Record the cause as confirmed by the product owner.

Assign shift duties. Assign container return, cleaning and cold-store return to a named person and shift; track completion in the record.
