When something like salt dissolves in water the mixture freezes below 0 °C, and the more salt, the lower the freezing point. At the eutectic proportion the mixture melts at one temperature like a pure substance; in the IUPAC definition, solid phases turn into a single liquid phase at a constant temperature. That is why the brine inside a plate gives its cold at a temperature that holds steady until the melt is finished.

GEBHARDT offers its eutectic plates with melting points of -3, -14, -18 and -21 °C. That figure is the temperature of the plate's cold, not the temperature of the product in the container.

Preparation is a third value: the freezing environment must be at least 5 °C below the melting point (-8 °C for a -3 °C plate), the fill must freeze completely and there must be an air gap between plates. The product's transport target is yet another value, and plate type and number are chosen against it; send route, product and target temperature to Aris Makina and we make the selection together.
