A horizontal stack exposes outer plates to cold air while covering the broad surfaces of those in the middle; a batch can look ready from outside while the inner row is not frozen. GEBHARDT calls for an air gap between the plates, a freezing temperature at least 5 °C below the melting point and a fill that is completely frozen before use.
| Melting point | Recommended freezing | Duration |
|---|---|---|
| -3 °C | -8 °C | 24 h |
| -14 °C | -19 °C | 24 h |
| -18 °C | -23 °C | 24 h |
| -21 °C | -26 °C | 24 h |
