Because insulation slows heat flow in both directions, a thermobox suits hot meals and chilled goods alike. Changing regime within a day brings in the heat and moisture left in the box: a box back from a hot run is still warm once empty, so the first hours of cold in a new load go into pulling that heat out and the product reaches its target temperature late.
Hygiene is the second issue. Food odour, grease and damp stay in the box; dairy and sealed chilled packs do not carry the same contamination risk, so the washing order follows the product group, and meals with allergens call for an extra clean. The Turkish Food Hygiene Regulation, Article 18, requires that food is not held at temperatures that could create a health risk. So the gap between two runs is written down for washing, drying and returning to a cold start; where that time does not exist, hot and cold work get separate box pools.
