Ready meals, salads and ambient side items may share a counter without sharing the same storage or handling conditions. Separate the workflow by product group and make handoff points visible.

Use a batch timeline. Record product or batch, preparation start, entry to chilled storage, removal to the counter and replenishment time on one sheet. Record the leftover disposition and responsible person too. Do not fill in times from memory.

Prepare only the needed amount of salad or chilled product and place it in closed chilled storage. Use clean, closed equipment for transfer; do not carry it on the same open trolley as hot food.

When a measurement is required, use the location and method set by the product and site procedure. Cabinet air is not a product reading. If records show repeated waiting or deviations, review batch size and replenishment order.

Do not decide end-of-day discount, reuse or disposal by habit. Follow current product conditions and food-safety procedures; segregate a deviating batch and consult the authorised person.
