With meat in a foam box, the time that counts is how long the meat stays under its temperature limit. Once the limit is crossed the time is over, even if the inside of the box still feels cool; the box delays that moment but does not remove it.
The Turkish Regulation on Specific Hygiene Rules for Food of Animal Origin sets the limit by product. Meat has to reach that temperature before transport and stay there throughout the journey.
| Product | Transport maximum | Article |
|---|---|---|
| Red meat | 7 °C | 17 |
| Offal | 3 °C | 17 |
| Poultry and rabbit meat | 4 °C | 22 |
| Mince | 2 °C, or -18 °C if frozen | 31 |
The box's job is to stretch the time up to that limit. If meat goes in above the limit, the foam does not cool it, and the coolant spends its first hours cooling the product and runs out early. So meat is first brought to target temperature in a cold room or fridge, and only then is the box closed.
Mistakes that shorten the time
- leaving empty space; air in a half-full box warms quickly
- not taping the lid
- putting the coolant under the meat; cooled air sinks, so the coolant belongs on top of the load
- letting frozen packs touch the meat directly; a packaging layer goes between them so the surface does not freeze
- placing the box on the sunny side of the vehicle or leaving it open at delivery
Measure at the core of the meat. When the box opens, the air inside changes at once and says nothing about the meat; the probe goes into the middle of the thickest piece. To plan a route, measure once with your own box, find the hour at which the meat crosses the limit and keep the route well below it. The gap is the margin for traffic and waiting.
Where meat ships regularly, the foam box becomes a cost bought again for every trip, and a broken box does not make a second trip. At that point, comparing trip count and box price with the cost of a reusable insulated container and eutectic plates is enough. GEBHARDT Isotec TBX is ATP- and HACCP-certified and holds the cold chain for up to 24 hours with eutectic plates or dry ice.
