GEBHARDT's table gives a recommended freezing temperature and time for each plate type, and the rule behind it is that the freezing temperature sits at least 5 °C below the plate's melting point.

Melting pointRecommended freezing temperatureFreezing time
-3 °C-8 °C24 hours
-14 °C-19 °C24 hours
-18 °C-23 °C24 hours
-21 °C-26 °C24 hours

GEBHARDT adds that freezing can take between 8 and 24 hours depending on the cooling technology: a cold store and a blast-freezing cell do not deliver the same result. The fill has to be completely frozen and solid before use.

Air must be able to circulate between the plates, so they stand on edge with a gap, ideally in GEBHARDT freezing racks, rather than stacked flat. Timing is only comparable when the start and the end are recorded the same way each time: the hour the plates go into the freezer, and the moment the fill is completely frozen.

The table time also decides how many sets you need. With 24 hours of freezing, a route run twice a day cannot reuse the same plates by midday, and a second set is required. Send Aris Makina the route, the product and the target temperature, and we calculate the plate type and number together with GEBHARDT.
