For GEBHARDT plates the freezer runs at least 5 °C below the melting point, air stays free between plates, and a set leaves only when the filling is solid.

Separate plates per container from the total plate pool. Combine the thermal assessment for your load and route with return and freezing schedules.

Container count comes from units simultaneously on route, returning, being washed or prepared. Use an event table to find the real peak.
Frequently asked questions
Why should plates not be stacked directly on each other?
Stacked plates block the cold air, so they do not freeze through to the core. A freezing rack maintains the gap, improving both freezing time and result.
At what temperature are the plates frozen?
GEBHARDT recommends freezing a plate at least 5 °C below its own melting point, in a freezer cell and using freezing racks.
