A water outage alone does not justify changing a wash procedure. If cleaning cannot be verified, keep soiled carriers out of dispatch. FDA's US disaster-reopening guidance illustrates the checks below; it is not a Turkish legal rule.
Separate dirty and clean flows
Move carriers to a designated dirty area; record status, previous product group and outage start. Prevent contact with clean equipment.
Get an alternative method approved
First verify that potable water is available. FDA guidance calls for potable water for washing, rinsing and sanitising food-contact surfaces. Use an outside washer or reserve supply only if site procedure and quality staff approve; verify the method and records.
Maintain a safe workflow. Continue only with carriers documented as clean. If clean stock is insufficient, reduce or stop dispatch; do not treat wiping as verified cleaning.
Document restart
Before reopening, inspect the full area and equipment. If an authority required closure, verify whether local authorisation to reopen is needed. Record the wash cycle, inspection and owner approval before returning carriers to clean stock.
