Sun, ambient conditions, power access, and display duration differ at each open market. Identify the product group and confirm its applicable storage requirements from the label, supplier, or authorised food-safety lead.
Set aside the display quantity according to the sales plan and decide in advance where and in what equipment reserve stock will be held. Do not select a container or cooler by nominal volume alone; trial it with the actual product load, packaging, access pattern, and site conditions.
On a pilot day, record time, product group, measurement point, instrument, ambient conditions, display quantity, and reserve-stock movements. If product temperature must be measured, use the site's approved method. Shade or a closed container alone does not prove suitable temperature.
If records show a deviation from the product requirement, remove the product from sale and ask an authorised person to decide. Do not estimate a universal safe duration or temperature; verify local market conditions and applicable official requirements separately.
