Delivery acceptance is not the moment goods reach the sales area. Add three timestamps to the same lot: unloading, entry into suitable cold storage and shelf placement.
Compare a week's records by shift and delivery size. If delay occurs at goods-in, review task order; if stock waits in the backroom, review space and staffing; if filling takes longest, review batch size and scheduling.
Elapsed time does not replace temperature monitoring. Check product temperature at the method and location set by your product procedure.
